Ingredients:
4 boneless skinless chicken breasts, cut into chunks and pan fried
1 head of broccoli, chopped
3/4 c. chopped carrots
1 c. chopped sweet peppers
1 medium onion
7 cloves of garlic (I had really small ones, if you have bigger ones cut down the number)
1 1/2 c. cooked rice
organic soy sauce
olive oil
ground ginger
salt and pepper
Directions:
Cook the rice and set aside. In a medium fry pan heat 1 T. olive oil. Cook the chicken with 1 T. soy sauce and 3 garlic cloves chopped. In another large pan (I know, you will dirty a lot of dishes) heat 1 T. olive oil and cook peppers, carrots and onion until soft. Add rest of the garlic and cook for 1 minute. Add 2 T. soy sauce, 1 T. ground ginger salt and pepper, stir to combine. Add the broccoli and cook until just tender. I don’t like my broccoli mushy. Stir in the rice and chicken. Add more soy sauce, however much it takes to coat the rice. Serve hot.
